My girl made these for me and my friends when we had some people over for dinner. There were NO leftovers 
These are friggin good, so I had her send me the recipe so that I could post it on here.
I like it with red potatoes, but use whatever kind you like.
Twice Baked Potato Casserole
ingredients:
Red, White or Yukon Gold potatoes (unpeeled)
Butter
Sour Cream
minced garlic
Parmesan cheese
optional ingredients:
horseradish
chopped onion or chives
crumbled bacon
cheddar cheese
instructions:
1. boil the potatoes
2. while the potatoes are cooking, saute the garlic/onions in butter until translucent but not caramelized.
3. when the potatoes are ready, add the garlic/onion, butter and sour cream and mash together. You may also add the optional chives(uncooked) and the bacon.
If serving red meat, you can add a small amount of horseradish to the sour cream before mashing and use cheddar instead of Parmesan.
4. Stir in about 2/3 cheese, reserving 1/3
5. Put the mixture into a casserole dish and top with remaining cheese
6. Cover and bake at 350 for approx. 30 minutes
Note: Use BUTTER. Also, use fresh garlic, not canned.
