my oven is on the fritz right now, need another way to cook some sweet potatoes... Any suggestions?:wavey:

Wet your tators and wrap them up in plastic wrap or a zip loc bag and microwave them for around 5 minutes...Nice and soft and ready for butter and brown sugar ...

Never been a huge fan of the way microwaved food taste, but that may be an option.... how about boiling them?

I forgot about this but , I have many of time cut up a bag of sweet tators and boiled and mashed them just like Baked tators .I add Butter and brown sugar and mash the hell out of them and its just like sweet tator pie with out the crust or candied pecans

I do a 50/50 mix with mashed red taters too. Add pepper and some butter.

When I make just sweet taters I use honey and cinnimon.

I'm getting hungry. Lol n

Poke holes in one with a fork all around ( at least 5 times) and microwave for five minutes on a paper towel.
You can flip it half way, but be careful as the heat comes out of the holes as steam and can burn your fingers quickly.

I almost always use the microwave when it comes to potatoes and sweet potatoes. I don't have time to sit around waiting for them in the over.

You can also peel them and cut them into quarters and boil them for about 20-25 minutes, then mash them while adding cinnamon, vanilla extract, nutmeg....or whatever else you want to add. This works best when cooking a large amount.
