i've heard that its a hit and miss w/ bear meat. either that, or the butcher screwed it up and left it out too long

very true buddy. It is also a matter of how clean of a kill you made and how well you took care of it before taking to the butcher. quick clean kill in the heart and skin as fast as you can. Quarter it then trek through the woods as fast as you can.
