Siska?s Kitchen: Protein Pancakes

When I want some variety in my breakfast and still eat right, I turn to chef Siska?s protein pancakes.
They not only taste great, they promote a good body composition and are super easy to make. Give them a try!
Sensei
Ingredients:
3 large organic eggs
1 scoop protein powder
1 tbsp coconut flour
? tsp cinnamon
? tsp cardamom
a pinch of salt
Directions:
Blend all the ingredients in a blender for 30 seconds on med-high speed.
Melt some butter or coconut oil on a pan and cook like regular pancakes.
Tips
If you have a sweet tooth or need a refuel meal you can serve the pancakes with sliced banana, a healthy chocolate spread or maple syrup. Having the pancakes with a sweet topping will not make you a bad person, but it might affect your blood sugar level. If you prefer a topping more gentle to your blood sugar, blueberries and your favorite type of nut butter will be an excellent alternative. If you need extra fat, add a spoon of good quality coconut oil or butter as topping.
Nice to know
The protein pancakes are a healthy and good protein source and a nice alternative to protein shakes or protein bars, as a pre- or post-workout meal, for breakfast or as a dessert. The combination of the omega 3 fatty acids, beta-carotenes from the organic eggs, amino acids from the protein powder and fibers from the coconut flour will provide satiety and be an energy boost to your brain and muscles. Especially if you eat them with organic butter or coconut oil.
In addition, the spices have several health promoting qualities:
Cardamom
Cardamom is very effective when it comes to fighting cough or a cold. It strengthens the body?s immune response and is good for lever and digestion. There are two types of cardamom, green pods and brown pods. The green pods are the ones with the best aroma and the many health-promoting qualities. The greener the cardamom pods, the better the quality.
Cinnamon
Cinnamon is an ancient spice and medicine with a large number of health benefits. It supports digestion, stimulates appetite, prevents food poisoning and is anti-bacterial. Furthermore, recent studies has acknowledged cinnamon for its blood sugar regulating qualities.
Cinnamon contains coumarin which in large scale intake has been linked to liver damage. Ceylon cinnamon, also called true cinnamon, has very little coumarin compared to Cassia cinnamon. Hence, if you want to avoid coumarin, choose Ceylon. A moderate intake of Cassia cinnamon will neither kill you nor damage your lever, but it might stimulate your senses in a way that could be associated with ?living on the wild side?.
