Deer Meat, yum

I also have a friend who hunts deer and brings me venison on a regular basis. He's on a first name basis with his local game warden, so he gets a lot of of leeway on getting extra tags. He just got 5 tags to rid an old ladies property of 5-6 deer who are jumping over her fence and destroying her ornamental trees and shrubs. He told me the same thing...."Clear all the junk out of your freezer cause I'm going to stuff it full of fresh venison." IMHO, nothing tastes as good as beef, but venison is much leaner and less contaminanted.
 
John you need to send me some man, I've had no luck finding that shit in Cali. Always wanted to try it!
 
Venison is great. Too bad we don't have Buffalo to hunt. That shit is my all time favorite. Twice the protein , a third the fat and tasty! Too bad is so damn expensive.
 
Never tried venison.. ever tried rattlesnake lol? Yeah I know some who prefer buffalo. They actually live on a reservation though. So they might have a cheap hook up
 
Never tried buffalo as it costs about $6 a pound here. I know it is lean and of high quality, but not sure if it contains any more protein than beef, pound per pound.

I have tried rattlesnake. Different, but not all that great. A couple of friends and I used to drive down to Ridgeland, South Carolina about 20 years ago and hunt snakes on the Oketee Hunt Club. At 50,000 acres, this remains the largest privately owned hunting club in the world, and in places, it's like trekking through a primeval forest. I've taken 7' long eastern diamondbacks and 5.5' long cottonmouths out of there. Even back then, snake hunters had abused the priveledge and the Oketee folks had shut it down except for a few of us they had known for years.

The native residents of Ridgeland were also like something from another country. Of Creole descent, these folks speak a dialect far harder to understand than any Cajun. I got a little embarrassed asking Willagh Vaignier to repeat his sentence 3 times over, as he was explaining how he dove right down into a bulldozed pit at a construction site and grabbed a 6 foot long eastern diamondback by the tail and flipped it over his head. He said, "I wu sho yu wulnt wan dis wun gettaway!" :D

I had a friend bagged some deer...it was a bit gammy depends on how you make it..I pounded it and marinated it...most dont know that only a few methods can tenderize meats...usually that requires a brine of water, salt, and some form of stock/broth with some sugar, molasses, or honey...or pound it or some type of acid such as lemon, lime and even yogurt or buttermilk...

buffalo meat is good shit...try emu...its very similiar...very low fat content...very lean...had a friend who raised a bunch of them...

Yeah I was on that kick for awhile. My top choice is buffalo/bison. And John that protein comparison was on ground beef to bison. The side by side steak comparison was the same. I guess most ground beef gets more filler. Or something.
