Ideas for non-stereotypical dates -- INPUT WANTED!

Ok, so me and this very interesting girl are going out on Friday. And normally I've got this whole Macaroni Grill (quiet, romantic, Italian dinner) then have some drinks and casually walk the strip type thing - and that works very well. But this girl is a bit different from the normal type I've taken out in the past. Shes a lot more fun, outgoing, and much more relaxed.

So, I'm looking for some good date ideas that fit all the categories

hmmm sounds to me like you could do anything with her and it would be cool

Me personally i'd be driving my ass somewhere to go hiking. I have always loved doing that and it gives you a lot of time to talk and get to know each other. Also, bring food and make a picnic out of it

However, that is not very exciting so i'll keep thinking

climbing at red rock was my first idea but then i looked at my left hand and remembered that its still in a cast, and thats how i broke it in the first place, so thats kinda out of the question. lol

but she is one of those girls who is down for anything. really fucking cool like that.
