Italian style egg white omelet

Ingredients:

400g egg white

200g ground beef (7% Fat)

50g yellow onions

50g zucchini

50g red & green peppers

3/4 cup diced tomatoes (with juice)

2 Tbsp chives

olive oil spray

Seasonings:

1/4 tsp. Italian herbs

1/2 tsp. Lawry's garlic salt

1/4 tsp. paprika

1/2 tsp. brown sugar

1/4 tsp. salt ( for egg white)

Heat up a non sticking skillet or pan with some of the olive oil spray.

Add the ground beef and season with garlic salt. Stir fry for two minutes.

Add all the vegetables except of the tomatoes. Stir fry until vegetables start to soften (2-3 minutes).

Add now the tomatoes and season with garlic salt, paprika, Italian herbs and brown sugar.

Keep over low heat slightly cooking for a few minutes.

During that time heat up a second non sticking pan or skillet with the olive oil spray.

Add the egg white and season with salt. Keep over medium to high heat and cover the egg with a lid.

When the egg white is cooked through it forms a nice pancake that you can slide on a plate. Add the stir fried meat and veggies on one side of the omelet and fold the other side over. Enjoy!
