I eat 2 salads a day....big ones!! I use baby spinach, romaine and iceberg lettuce (mostly spinach). With red onion, mushrooms, tomato, peppers, and a low-fat Italian dressing. Sometimes I'll put my tuna or chicken breast in with it. It's a great way to fill up and get in the fiber, vitamins, etc with little calories. Just don't go overboard on the dressing. I only use a tablespoon. Cottage cheese is good as a dressing too.
